La c\u00e9r\u00e9ale qui convenait le mieux \u00e9tait le petit \u00e9peautre et les fuvelains \u00e9taient friands de recettes r\u00e9alis\u00e9es \u00e0 partir de ces grains, en particulier la soupe d&rsquo;\u00e9peautre, un plat qui n\u00e9cessitait une cuisson particuli\u00e8rement longue et donnait un bouillon assez gras d&rsquo;autant que les m\u00e9nag\u00e8res n&rsquo;h\u00e9sitaient pas \u00e0 ajouter un os pour donner un peu plus de go\u00fbt.
